Pregancy Update – Almost There!

January 25, 2010

First off, this little boy is doing great. He’s very strong and moves around a lot every day. When Jason and I are drifting off to sleep in bed he snuggles up to me with his hands on my belly feeling the baby move and settle-in for the night. Once when he had his ear pressed to my belly listening to the heartbeat and the baby swooshing around, his son kicked him in the face! It was a sweet moment turned hilarious! We need to do some shopping. The only baby clothes we have are size 12-months and up. All of Jeremy’s smaller clothes were donated without my permission, so we need to buy everything an infant needs. It truly isn’t much, because babies really don’t need as much as they usually are given, but we still need to shop or else this kiddo is coming home from the hospital in some clothes that will be way too huge for him. In the next month or so I’m going to scour our local Goodwill for gently used or like-new clothes before paying full price for anything a baby will outgrow in less than 3 months. I know weight gain...

Mimi’s Brownies

Mimi’s Brownies

I was informed that Jason was going to have a pot-luck at work tonight. Last time he forgot to tell me until the day of the event, so this time I got a few days notice. I used those few days to think about what I wanted to make and got all worked up to bake. Then he told me last night that the cook-out was postponed to next week. But I have the urge to bake! I ate the last piece of the weekend’s apple pie last night and knew for certain that my third trimester pregnancy cravings would demand sweets tonight. So I went rummaging through my great grandmother’s recipe box again and came up with her scratch-made brownies. 1 cup butter 2 cups sugar 2 tsp vanilla extract 4 eggs 3/4 cup cocoa 1 cup all-purpose flour 1/2 tsp baking powder 1/4 tsp salt 1 cup chopped nuts or chocolate chips (optional) Preheat your oven to 350 degrees and grease a 13×9″ baking pan. Melt the butter and stir in sugar and vanilla. Add the eggs, one at a time, stirring well after each addition. Add the cocoa and stir slowly until completely blended. Stir in...

Financial Peace – A Start

January 21, 2010

Jason and I have always been really open about our separate and combined financial situations. When we first decided that marriage was in our future we discussed our past money mess-ups and how we stood at the time – full disclosure. Ever since then we have had regular talks about how we feel about money, what we want to do with what we have, and what our end-goal is. Oddly enough, we’ve never fought about money, I think it’s because we never hid anything from each other and made every financial decision together, even the little stuff. When we were making the decision to move from California to Alabama this past summer, we took a good long painful look at our financial situation. We looked at our then-current budget and we made a realistic budget for after the move. We took into consideration the extreme changes in income and did some severe cut-backs in our budget (i.e. swapping the $400/month cell phone plan for a single emergency cell, eating out whenever we wanted to once-a-month or less date nights, etc.) We also estimated future budgets by considering when Jason would be getting expected raises and when certain expenses would...

Menu Plan, January 2010

January 10, 2010

I am excited to try some new recipes this month. We’ve been stuck in a rut of the same old things and I was getting bored. My family is just happy that I cook everyday, but when I cease to enjoy it out of boredom, that’s no good for anyone. So, this month I incorporated some new things with some of our favorites. Breakfast: Cold cereal or toast/waffles (we’re not big breakfast eaters around here with Jason on the night shift). Lunch/Dinner: Weekday lunches are the big meals listed below; weekends we have the big meal in the evenings. The other meal is usually something of a rotation of sandwiches, mac & cheese, or leftovers. Friday, January 1 – Sunday, January 3: On the road home from our California Christmas vacation. Monday, 4th: Chicken Pot Pie Soup & cornbread Tuesday, 5th: Pizza from the freezer (got a great deal from Winn-Dixie to buy 2 pizzas and get a bunch of things free!) Wednesday, 6th: Baked Ziti Thursday, 7th: Pot Roast & fried potatoes Friday, 8th: BBQ Chicken, seasoned potatoes, & carrots Saturday, 9th: Date Night for my birthday (a few days early). Sunday, 10th: Tacos & fruit Monday, 11th:...
