Menu Plan – December 2009

This month’s menu plan was easy. Jason’s gone for the first two weeks, so I can skimp on recipes a little to save money. Then he’s home for a week before we’re gone for the last two weeks to spend the holidays with our families in California. Breakfasts: Cold cereal, waffles, oatmeal, toast. Lunches: Grilled cheese sandwiches, turkey/ham sandwiches, tuna sandwiches, quesadillas, mac & cheese. Dinners: Tuesday, 1st: Spaghetti & Garlic Bread Wednesday, 2nd: Chicken Noodle Soup Thursday, 3rd: Tacos & Fruit Friday, 4th: Eggs, Sausage, & Cinnamon Rolls Saturday, 5th: Garlic Pepper Chicken, Corn, & Mashed Potatoes Sunday, 6th: Beef Chili (never tried this before) & Cornbread Monday, 7th: Chicken Pot Pie Soup Tuesday, 8th: Homemade Pizza (never tried this either) Wednesday, 9th: Orange Chicken & Fried Rice Thursday, 10th: Potato Soup Friday, 11th: Hamburgers & Tater Tots Saturday, 12th: Cheesy BBQ Chicken, Rice-a-Roni, & Carrots Sunday, 13th: Pot Roast, Baked Potatoes, & Corn Monday, 14th: Chicken Noodle Soup Tuesday, 15th: Tacos & Fruit Wednesday, 16th: Italian Pork Chops, Mashed Potatoes, & Baked Apples Thursday, 17th: Spaghetti & Garlic Bread Friday, 18th: Eggs, Sausage, & Cinnamon Rolls Saturday, 19th: Homemade Pizza Sunday, 20th – Saturday, January 2nd: Driving...

Preparing for my First Thanksgiving

Thanksgiving is my favorite holiday of the year. I love it love it love it. I think perhaps because it’s an entire day that is dedicated to just being thankful and spending time with loved ones. Most of the other major holidays have good intentions but are overshadowed with candy and commercialism and their true meaning is lost on many people (think Easter, Christmas, Halloween, Valentine’s Day). I think the only other unspoiled holiday is Independence Day and it also ranks right up there as a favorite of mine. I was born and raised in the same small-ish city where all of my extended family lived. My great-grandparents lived there and all of their kids and grand kids set up house there as well. We spent every holiday together – all of my aunts, uncles, grandparents, and cousins. Everyone hosted a holiday at their house and it rotated every year. Everyone else is tasked with bringing a dish and we all celebrate together. I am always told to bring the rolls or a dessert. This will be the first year that I won’t be spending a holiday with them. Two Tough Lessons

Yesterday Jeremy learned two really tough lessons in one day. I felt bad for the poor little guy that he had to learn them the hard way, but there is no mistaking whether he’ll need a refresher course. Lesson 1: The Toaster is HOT. I was making Jeremy some toast in the super wonderful toaster oven that Jason and I bought with a wedding gift certificate. The front is glass. While I was getting his favorite strawberry jam from the fridge, Jeremy touched the glass front of the toaster. A blister popped up almost immediately on his finger tip, we iced it, and he learned real real quick why we don’t touch toasters. Lesson 2: Don’t Put Stuff in a Fire. We went to an early potluck Thanksgiving dinner in the late afternoon. It was put on by the local military spouse’s club at the base that Jason works at. They had the tables nicely set including small tea-light candles and paper leaves sprinkled over the tablecloths. Monster Cookies

This is one of my very favorite cookies to bake. As I told a friend of mine, they are like the “everything bagel” of the cookie world. I didn’t create these, I first saw them on Paula Deen when she shared a recipe from a fan of hers four years ago or so. However, I changed a couple of things to suit my taste. Here is my recipe: 1 cup granulated sugar 1 cup packed brown suagr 1/2 cup butter (unsalted) or butter flavored shortening 1 1/2 cups chunky peanut butter 3 eggs 2 teaspoons vanilla extract 1 teaspoon baking soda 1 teaspoon baking powder 1 cup chocolate chips 1 cup raisins 1 cup M&Ms 4 1/2 cups rolled oats (old fashioned or instant) 1) Cream the butter (or shortening), peanut butter, and sugars. 2) Add eggs and vanilla. 3) Stir in baking powder and soda, chocolate chips, raisins, and M&Ms until well distributed. 4) Incorporate oats 1 cupful at a time. 5) Drop by rounded spoonful on a greased cookie sheet. November Menu Plan

This monthly menu planning and shopping almost entirely at once is really working out well for us. Breakfasts: Cold cereal, oatmeal, waffles, toast. Lunches & Dinners: As follows… On weekdays we have our large meal at lunchtime so that Jason can eat with us before he goes to work for the night shift. On weekends we have our large meal in the evening. For the other meal we have a selection of sandwiches, leftovers, quesadillas, pizza, quickie pasta, or the occasional snack tray with smoothies. Here is my plan for the large meals: Sunday, 1st: Italian chicken with carrots and rice. Monday, 2nd: Farfalle (bowtie) pasta with meat sauce. Tuesday, 3rd: Pork roast with mashed potatoes and corn. Wednesday, 4th: Tacos and fruit. Thursday, 5th: Chicken noodle soup and rolls. Friday, 6th: Hamburgers & fries. Saturday, 7th: Monterey chicken with potato casserole and skillet corn. Sunday, 8th: Beef stew and cornbread. Monday, 9th: Pork chops with baked apples and rice. Tuesday, 10th: Baked ziti with corn-on-the-cob.
